It is like Novak is doing nothing. Keep the ball deep. Move the other guy a bit here, a bit there. The economy of his game is borderline ridiculous.
He simply knows he can't be beat.

An in-form Sinner can beat him if he plays like this, but after last year, I assume Djokovic knows he would have to play more aggressively if they meet in the semis.

You have to think Sinner learned something from what happened in the final three sets last year.
